My favorite tried and true recipe for when I have friends over is Martha Stewart’s Goat Cheese Quiche with Hash Brown Crust (link for recipe below). I had forgotten about this until a friend recently emailed me that she finally tried to make it herself at home. This was the recipe I made many times when friends came over to help me prepare for my wedding. I was so busy but wanted to show my appreciation by feeding them with a nice meal. And this definitely falls into the category of “fast, easy and delicious!’
Yes, this is a quiche with a hash brown crust. What a great idea! No complicated pie dough to work with. Just remember to get a springform pan. (Yes, I did purchase such a pan just for this recipe and it was worth the trip to the store and the money spent on it!) Also, make sure you have waxed paper on hand to help you make the crust. Lastly, I found hash brown that is long and thin is much easier to work with than the type cut into tiny pieces.
If you have leftovers, put them in the fridge in an airtight container or wrapped with saran wrap. Microwave or heat in the oven for a few minutes when you’re ready for more.
